High Protein Pancakes (Oat, Flaxseed & Chia)

With approximately 9g of protein per pancake, these are great for making your family’s bellies feel full!

Do your kids keep asking for something else when you offer them a healthy breakfast? Mine too – until we started making these!

A yummy treat and yet your mind is at ease that they are getting a great serve of protein and fibre.

Ingredients (makes 6-8 medium size pancakes)

  • 50g oats
  • 120g plain flour
  • 2 eggs
  • 3 tbsp Greek yoghurt
  • 1 cup soy milk (or your milk of choice)
  • 1 tsp baking soda
  •  1/4 tsp salt
  • 1 tbsp honey
  • 2 tbsp chia
  • 3 tbsp ground flaxseed (optional)

Method

  1. Blend oats in a food processor on high until a powder is formed and set aside.
  2. Whisk eggs, yoghurt and milk together in a bowl.
  3. Add oat powder and all other ingredients. Mix until combined and let it sit for 10 minutes.
  4. Cook on a low heat, flipping when edges are no longer a runny texture.
  5. Repeat until you have used all of the mixture.

Making 6 large pancakes…

Approx 9g of protein and 4.5g of fibre per pancake.

This batter is the perfect consistency for either small, shaped pancakes or large ones.
